We hired a third party food safety lab to test these sediments and they confirmed they are coconut milk and are safe to consume. Fortunately, the sediments are coming from our coconut water and are not a food safety concern. Our recent coconut water supply contains trace amounts of coconut milk, which contains insoluble fat that is floating to the top. There is also an option to pour out the top of the bottle which will then remove most of the sediments.
